For the last week or two all celebrity blogs, and entertainment news have been buzzing about her wedding. Before the nuptials Mrs. Humphries presented all of her guest with cupcakes & candles as a small token of her appreciation, as well as a way for them to pamper themselves.

Coconut Big Top Kupkake

Coconut Big Top Kupkake with Cream Cheese Icing

Special request for the friend of my client... Looking to surprise a good friend for their birthday, one who is a coconut lover. Looking at the pictures, the client & birthday girl were pleased.

The recipe called for coconut extract, but I had the hardest time finding it. As any great baker would do, I substituted with other extracts to give it more than just a coconut flavor. Almond extract and vanilla extract are good pairings for a coconut cake topped with cream cheese icing.  There is a chocolate filling in the middle too. Yum yum...
