Coconut Big Top Kupkake with Cream Cheese Icing

Special request for the friend of my client... Looking to surprise a good friend for their birthday, one who is a coconut lover. Looking at the pictures, the client & birthday girl were pleased.

The recipe called for coconut extract, but I had the hardest time finding it. As any great baker would do, I substituted with other extracts to give it more than just a coconut flavor. Almond extract and vanilla extract are good pairings for a coconut cake topped with cream cheese icing.  There is a chocolate filling in the middle too. Yum yum...

Tea Party Kupkakes

A special 3 year old by the name of London had a big birthday celebration. The theme was Alice & the Wonderland. Her uncle handle all of the pretty decor you see below. This was my biggest order to date, approximately 10 dozen kupkakes. It was a little stressful in the beginning... But in the end of the order I remembered why I have such an infactuation with KUPKAKES!!!!!
